Riddle me this: 


What gets wetter the more it dries? 

A towel! …  

I’m sure you’ve heard that one before. 

Here’s a harder one: 

What gets less useful the more we use it?

Our soil. 

Over the last 50 years, the nutrients in our soils have depleted. 

Today, you would have to eat eight oranges to derive the same amount of Vitamin A as our grandparents would have gotten from just one... 

When it comes to other vegetables it gets even worse. Scientists have estimated that you would need to eat 40 (yes FORTY) bowls of spinach to gain the equivalent nutritional value that just one serving provided back in the 1940s. 

Modern day farming practices have adapted to feed a booming population…  

Unfortunately, this has come at the expense of the nutrients in our topsoil, meaning food doesn’t have nearly as much nutrients as it once did.
